Is any part of this set real wood?

No. The boards are HDPE moulded with a wood grain texture, the base is powder coated metal and the fixings are stainless steel. The wood look is a finish of the material, not a veneer over it.

Will the grey fade?

The manufacturer calls it non fading and publishes no rating behind that. What is true of HDPE generally is that the colour runs through the board rather than sitting on the surface, so a scrape shows the same grey rather than bare material.

Does it need covering in winter?

The maker publishes no winter instruction for this set, and HDPE is used outdoors year round because it does not absorb water. Covering it will keep it cleaner, but nothing here needs to come in the way a wooden set or a cushion does.
